The first release of the De Iuliis Pecorino and what a mighty fine debut it is. Crispy and crunchy, it is very delicious!
Being the first release, this was handled similarly to Semillon in the winery. Watch this space Mike de Iuliis tells me. The 2022 will be cold soaked to spend more time on skins to develop some more texture and structure.
Already in a good place, find underripe pear and green apple crunch, cut herbs and a whip-crack of lime acidity on close. A fine texture is evident already as is a very faint honeysuckle character. Tempura prawns, hot chips as well as fresh seafood would lap this up now. I’d be curious to see how it develops with some bottle age. But with its fresh approach, just leap in now.
Drink to five years.
