The Story
This handcrafted wine is a great example of a modern Hunter chardonnay. It’s one of Mike’s favourite wines to make due to its versatility.
The Wine
Subtle aromas of vanillin oak and melon with a hint of green pear. A rich fruit palate combines with the creamy texture from the French Oak. The palate is clean, with lingering peach flavours.
The Vintage
Excellent growing conditions in 2021 led to the production of this outstanding wine. The fruit was handpicked and whole bunch pressed, then fermented in French oak barrels.
The Potential
Drinking very well now, but will continue to improve with 3-4 years further cellaring.
The Match
With beautiful length and finish this chardonnay should be enjoyed with spatchcock quail with bacon and pea salad.
